2) Kashmiri Saag
Saag is a vegetable curry made in different ways across India. The Kashmiri version uses spinach and fenugreek (methi) leaves that are cooked with ginger, garlic, onions, tomatoes and dried red chillies to create a dish that’s richly aromatic but not too spicy.
